Welcome to Holt's Non-Gluten Diet & Recipes
Hello and welcome to my blog! I’m so excited to share this space with you. If you're new here, let me give you a little background about myself and why I decided to start this blog.
I have been exhausted, not sleeping well, have little energy and have constant headaches. It turns out I’ve been living with a gluten allergy for some time now, and the journey to discover what works for me has been eye-opening. After cutting out most gluten from my diet, I noticed a huge difference in how I felt. I started feeling more awake, energized, and just overall happier. My body wasn't reacting as negatively as before, and I was experiencing fewer headaches, bloating, and fatigue. It was like a fog had lifted, and I felt clearer and more focused in my daily life.
For anyone else out there who might have a similar experience or is curious about how eliminating gluten might impact your well-being, I hope my blog can provide you with some helpful insights, inspiration, and support.
On this blog, you’ll find a variety of non-gluten recipes that are both delicious and easy to make. I’ll be sharing everything from breakfast ideas to savory dishes, snacks, and even some sweet treats! My goal is to show that a non-gluten diet can be tasty and satisfying—no sacrifice required.
Why I Chose a Non-Gluten Diet
For as long as I can remember, I’ve struggled with the effects of gluten. After some time and trial and error, I found that eliminating it from my diet made a world of difference. My energy levels are up, I find it easier to wake up every day and I feel much more awake throughout the day.
I used to suffer from headaches and digestive discomfort, but those issues have drastically improved. There’s something about cutting out gluten that feels like giving my body a little break, allowing it to thrive and function better. With the increase in energy, I’ve also noticed that my mood has lifted and greatly improved—I feel more positive and ready to take on the day.
Of course, it’s not always easy. Cutting out gluten means being extra mindful of what I’m eating and reading labels carefully, but the benefits are totally worth it. That’s why I’m so passionate about sharing this journey with others.

Recipe: Gluten-Free Avocado Toast with a Twist
Now, for a fun, easy, and flavorful non-gluten recipe to get you started!
Ingredients:
- 2 slices of gluten-free bread (your choice of brand)
- 1 ripe avocado
- 1 tablespoon of lemon juice
- A pinch of salt & pepper
- Crushed red pepper flakes (optional)
- 1 egg (fried or poached)
- Fresh herbs (like cilantro or parsley) for garnish
- 1 tablespoon olive oil for drizzling
Instructions:
- Start by toasting the slices of gluten-free bread in your toaster or on a grill pan for that perfect crunch.
- While the bread is toasting, cut your ripe avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash it with a fork, and mix in the lemon juice, salt, and pepper.
- Once the toast is ready, spread the mashed avocado evenly on each slice of bread.
- Heat a small pan over medium heat and cook your egg to your liking. I love a poached egg, but fried works just as well.
- Place the egg on top of the avocado toast and sprinkle with crushed red pepper flakes (if you like a little spice) and fresh herbs for garnish.
- Drizzle with a touch of olive oil to finish it off.
Enjoy your delicious, gluten-free, and energizing avocado toast! It’s perfect for a quick breakfast, lunch, or even a snack.
